Tantilise your taste buds with this Gut Lovin' Rocky Road that's Gluten Free and low in sugar! All the elements of the normal recipe that we all grew up eating but healthified đ
 INGREDIENTS:
For the rocky Road layers, you will need:
1 packet Dandies marshmallows, chopped roughly
3 blocks Vitawerx Fruit & Nut chocolate (or milk chocolate), chopped roughly
100g 2die4 Hazelnuts, chopped roughly
100g Dr Superfoods Organic Dried Raspberries
1 Tblsp Chef's Choice Organic Coconut oilÂ
For the Gelatine Gummies (a.k.a the 'lolly' element of the dish), you will need:
1 heaped tblsp Locako Natural Gelatine
200ml boiling water
1 tblsp Hopper Cherry Red food colouring
For the white chocolate drizzle, you will need:
1 block Vitawerx white chocolate, chopped roughly
1 tblsp Chef's Choice Organic Coconut oil
METHOD:
Prepare the gelatine gummies-
In a large 500ml glass measuring cup, add the tablespoon of gelatine and food colouring and mix until the gelatine is all incorporated into the water. Pour into a rectangular/square container and allow to set for about 30-45 mins in the fridge. You will know it's set as it won't be a runny consistency, rather a jelly-like consistency. You can then cut this into small even square pieces and set aside.
Layer it up-
Layer out all the chopped marshmallows, hazelnuts, raspberries and gummy pieces in a square 20x20x5cm baking tray. No need to be neat, just scatter them evenly and place in the fridge.
Next you will need to melt the 3 blocks of fruit & nut chocolate in a small pan on LOW heat. Add in the tablespoon of coconut oil to make the consistency of the chocolate a bit thinner so that it's easier to pour.Â
Once that is melted, you will need to let it cool down a bit before pouring it over the rocky road, but not for too long that it hardens up again. (the reason for this is that it will melt the gelatine, trust me I learnt this the hard way! đ© )Â
Once cooled, remove the tray from the fridge and pour the melted chocolate all over the layers and smooth it out with a spatula, then place it back in the fridge and allow to set for about an hour.
Time to drizzle-
Once all set, melt the block of white chocolate and coconut oil in a small pan on LOW heat and drizzle it all over the rocky road using a fork.
Cut into even square pieces and enjoy đÂ
